Italian Cookies

"My mom used to make these all the time when I was a kid. It holds strong memories of her baking." - Rose

Ingredients

3 cups flour
1 stick of margarine (softened)
3 tsp. baking powder
1 T Vanilla
¾ cup sugar
3 eggs

Directions

  1. Mix flour, margarine and baking powder together then add the rest of the ingredients. Incorporate with the paddle attachment. Dough will be very sticky.

  2. Wrap dough in plastic and refrigerate for 30 minutes.

  3. Take out and separate into 3 parts.

  4. Using flour on hands and board, roll out pieces, one at a time. (Dough is still sticky, but manageable.)

  5. Once your piece is flat, add grape jelly and smooth throughout the piece.

  6. Add some chopped walnuts.

  7. Fold over, seal edges and carefully put on a cookie sheet with parchment paper.

  8. Do the same with the other parts of the dough.

  9. Brush the cookie logs with egg wash and sprinkle with some sugar in the raw.

  10. Bake for 25 minutes.

  11. Let cool and slice.

Yields

3 Logs - about 30 cookies
